GN Pan Sizes — Visual Reference

The 1/1 GN pan (530 x 325mm) is the base unit — every other size is a fraction of it. Two 1/2 pans fill a 1/1 space exactly. Three 1/3 pans fill it. This modularity means pans and lids from different brands are interchangeable across all GN-compatible equipment.

How to Choose the Right Gastronorm Pan

  1. Match your application: Stainless steel is built for hot food and cooking, polycarbonate works best for cold storage, and enamelled pans add a touch of style for display.
  2. Select the correct size: Stick to standard GN sizes like 1/1, 1/2, or 1/3. These fit your ovens, bain-maries, and prep stations perfectly — switching between preparation, cooking, and serving without transferring contents.
  3. Check the depth: Shallow gastronorm pans (20-40mm) are great for serving or display. Deeper pans (65-200mm) are ideal for bulk storage, batch cooking, or reheating larger quantities.
  4. Consider lids and accessories: Lids keep food covered, hygienic, and at the right temperature. Drain grates keep moisture under control, especially with freshly washed or chilled ingredients.
  5. Temperature range: Stainless steel and high-heat polycarbonate handle cooking or reheating. Coldmaster and standard polycarbonate are perfect for chilled service or cold displays.

Top Use Cases for Gastronorm Pans

Restaurants & Catering

Move from prep bench to oven to bain-marie without transferring contents. GN pans reduce handling time and keep food at temperature throughout service.

Buffets & Food Displays

Polycarbonate and enamelled gastronorm trays provide hygienic food presentation for buffets, salad bars, and self-service stations. Black polycarbonate adds a styled contemporary look.

Food Storage & Transport

Clear polycarbonate pans let you identify contents at a glance. Lidded units keep prepped ingredients organised, covered, and ready for service.

Combi Oven Cooking

Perforated stainless GN pans are the standard format for combi oven steaming — steam circulates through the perforations for even, consistent cooking results.

Aged Care & Institutional

GN pans standardise portion control across large-scale operations — hospitals, aged care, school canteens, and airline catering all rely on the GN system for consistent, efficient meal service.

Gastronorm Food Pan FAQs

What is a Gastronorm pan?

A Gastronorm pan — also known as a Gastronorm tray or GN pan — is a commercial kitchen's universal food container. Designed in standardised sizes (the GN standard, EN631-1), it fits perfectly in commercial ovens, refrigerators, blast chillers, bain-maries, and prep tables. The modularity of the system means pans move from prep bench to oven to bain-marie without transferring contents — less handling, less risk, faster service.

What does "Gastronorm" mean?

Gastronorm (GN) is a European standardisation system (DIN EN 631-1) defining exact external dimensions for food pans used in commercial kitchens. Developed in Switzerland in 1964 and adopted internationally, it ensures pans, lids, and accessories from different manufacturers are interchangeable and fit standard equipment — bain-marie units, combi ovens, blast chillers, refrigerated prep tables, and storage racks. The 1/1 GN pan (530 x 325mm) is the base unit; all other sizes are exact fractions of this.

What are the standard GN pan sizes and dimensions?

The base unit is the 1/1 GN pan at 530mm x 325mm. All other sizes are fractions of this: 2/1 (650 x 530mm), 2/3 (354 x 325mm), 1/2 (325 x 265mm), 2/4 (530 x 162mm), 1/3 (325 x 176mm), 1/4 (265 x 162mm), 1/6 (176 x 162mm), and 1/9 (176 x 108mm). Standard depths run from 20mm through 25, 40, 55, 65, 100, 150, and 200mm. All dimensions are external — internal capacity varies by material thickness. See the diagram and size table above.

What materials are used for GN food pans?

Common materials include Grade 304 (18/8) stainless steel for heat applications and food-grade polycarbonate for cold or display use. Stainless is durable, non-reactive, and handles the full temperature range from blast chilling to oven cooking. Polycarbonate is lighter, transparent or opaque (black), and rated -40 to +99 degrees C — ideal for cold prep tables and display. High-heat polycarbonate handles hotter service conditions. Coldmaster (Cambro) is double-wall insulated polycarbonate for cold-holding without ice. Enamelled pans have a styled ceramic-look finish for front-of-house display.

Can I use GN pans for both hot and cold food?

Yes, many gastronorm pans are versatile for both hot and cold service — but the right material matters. Stainless steel GN pans handle the full range: oven cooking, bain-marie hot holding, blast chilling, and refrigerated storage. Polycarbonate pans are better suited to cold or ambient service and should not be placed in a conventional oven. High-heat polycarbonate is rated for hot holding in a bain-marie but is not an oven pan. Always check the manufacturer's temperature rating for the specific product and application.

Can you cook in a Gastronorm pan?

Yes — in stainless steel Gastronorm pans. You can roast, steam, and bake without issue as they handle full commercial oven temperatures. Perforated stainless GN pans are specifically designed for combi oven steaming. Do not use standard polycarbonate pans in an oven or under direct flame — they are designed for cold storage or serving only. High-heat polycarbonate can handle hot holding in a bain-marie but is not an oven pan.

Can you put Gastronorm trays in the oven?

Stainless steel and aluminium Gastronorm trays are oven-safe and compatible with convection ovens and combi steam ovens. Perforated stainless pans are designed specifically for combi oven steaming. Polycarbonate GN pans are not oven-safe — they are designed for cold storage and serving use only. Always check the product's rated temperature before placing any pan in an oven.

What is a perforated Gastronorm pan?

A perforated GN pan has holes in the base and sides to allow steam, liquid, and air to pass through freely. They are the standard pan format for combi oven steam cooking — steam circulates through the perforations around the food for even results. Also used for drain-and-hold applications (blanched vegetables, fried foods resting before service) and in cold buffet ice bath setups where the perforated pan sits above a solid pan containing ice. Do not use perforated pans for soups or liquid-based dishes.

Are standard lids compatible with GN pans?

Yes — standard GN lids are designed to match GN pan sizes (1/1, 1/2, 1/3, etc.). Because all GN products conform to the same EN631-1 standard, a lid from one brand will fit a pan from another brand of the same GN size. Lids help retain temperature, reduce moisture loss, and maintain hygiene. Always confirm the lid's GN size matches your pan. Check whether you need a solid lid, notched lid (for ladles), or hinged lid for your application.

What is a Coldmaster GN pan?

Coldmaster is a Cambro product range — double-wall insulated polycarbonate GN pans that keep food cold for hours without ice or electricity. They do not generate cold; they must be pre-chilled before use. Once pre-chilled, the insulated walls slow the rate of temperature rise during service. Ideal for buffet lines, salad bars, and catering displays where refrigerated infrastructure is not available. Always monitor food temperatures during extended service.

Are gastronorm trays dishwasher safe?

Most stainless steel and high-quality polycarbonate gastronorm trays are dishwasher safe. Stainless steel handles commercial dishwasher temperatures without issue. Polycarbonate should be checked against the manufacturer's guidelines — most food-grade polycarbonate is dishwasher safe at standard commercial temperatures, but repeated high-temperature cycles can reduce lifespan. Enamelled pans should be hand-washed where possible to preserve the enamel coating.
