What's the difference between a Combi Oven and a Convection Oven?

Combi Ovens have a steam function with 100% humidity control combined with convection heat with fan speed control.

Convection Ovens circulate heat through fan forced convection and have fan speed control & may have some capacity for humidity control; if this feature is available in a Convection Oven it will be fairly light in duty compared to the full steam capacity of a Combi Steam Oven & is designed to add some humidity to the food cooking chamber but won't offer a steam function.

A lot of the lighter duty Commercial Convection Ovens are perfectly suitable for tasks such as cakes, biscuits and pastries; cooking proteins such as lamb or beef joints & gastronomy cooking may not be suitable.
How much does a Combi Oven Cost?
Combi Ovens differ considerably in terms of features and quality & of course price; some model sizes are capable of feeding 500+ people per day and may cost upwards of $70,000 but an entry level Combi Oven might cost about $7,000 in Australia.
What gastronorm tray size & type do I need for a Combi Oven?

Tray size of Gastronorm pan vary depending on the Combi Oven you've selected. The most common Gastronorm tray size by far is the Gastronorm tray measured at 530 x 325mm or GN-1/1; usually 40mm deep; this is the standard size to which all Gastronorm sizes are measured against. It's worth noting that there are also Bakery Combi Ovens that have tray size of 600 x 400mm & convection oven trays are also available in different sizes.

Gastronorm trays come in standard depths of 20 mm, 40 mm, 65 mm, 100 mm, 150 mm, 200 mm. Drain lids and lids with cutouts are typical accessories. They're designed specifically for the catering sector since they're manufactured in these measurements.


Does a Combi Oven need a Canopy?


Yes. Because Combi Ovens generate a lot of steam and heat, sufficient extraction is required. The extraction of most jurisdictions is required by law. Rational & Unox provides a variety of exhaust hoods for customers who do not have access to existing ventilation or would prefer to avoid installing externally ducted ventilation. It's worth noting that this option is only suitable for electric Combi Ovens.
